This plugin is possibly the more comprehensive of Admin Bar customization plugins. It allows you to custom the CSS, the JavaScript, and manage the default enabled or disabled options within the Admin Bar.

Everything from the WordPress logo to the blog name to whether it’s disabled on the site or just the dashboard, you have the kitchen sink available to you.
